Simply the best recipe we've tried for low-carb, sugar-free Chocolate Chip Cookies! The rich chocolate flavor comes from Choczero chips which have NO erithrytol (sugar alcohol), so they do not have that cooling effect that some recipes leave in your mouth. They're rich, buttery, chocolatey and in our opinion they're the perfect sugar-free chocolate chip cookie!
Preheat oven to 375 if cooking immediately. We recommend refrigerating for 1-2 hours so they don't spread too much when baking!
Cover two baking sheets with parchment paper or a cookie silicone sheet (see suggested equipment above)
Into a small bowl, add the dry ingredients: almond flour, baking soda, baking powder and salt.
In a stand mixer with paddle attachment, cream together the butter and monkfruit with allulose sweetener until light and fluffy
Add egg and vanilla. Beat until combined.
Add dry ingredients to mixing bowl and beat until dough is uniform
Add chocolate chips and stir (by hand) until they are well mixed and distributed throughout the batter.
Scrape the sides of the bowl and remove dough from paddle. Stir again by hand to make sure all is incorporated
Cover with plastic wrap and put in refrigerator for at least 1 hour, preferably 2 and overnight is even better!
Remove from fridge and preheat oven to 375
Once oven is ready, form golf ball sized balls out of the dough, then place on the parchment-lined cookie sheet or cookie silicone sheet (see equipment above)
Bake 8-10 minutes until done. Enjoy!!
Notes
Cookies will appear darker than regular cookies due to the almond flour.
